Posh Thai - A delicate mild green curry with green vegetables.

Serves 10
1 Kg. (2lbs 8oz) Fresh Monk fish (diced)
500g (1lb 4oz) Shelled raw prawns
275g (10 oz) Spring Onions
275g (10oz) Green peppers (diced)
450g (1lb) Frozen petit pois cooked and refreshed
275g (10oz) Fine green beans
Fresh Basil
Oil for frying
1 jar Thai green RTU sauce.

Preparation time: 15 minutes
Cooking time 10 minutes
Heat some of the oil in a wok. Add the monkfish, so not cooked right
through, Keep warm
Do the same with the prawns
Next, fry together the sliced green pepper, onions and green beans
add the Thai Green Curry RTU sauce
Return the fish and the prawns to the sauce and simmer gently to
cook, take care not to break up the fish.
Add the petit pois and serve at once garnished with chopped basil
Serve with rice or noodles.
