Mediterranean Vegetable Sandwich

150g Dolmio ® Bolognese Sauce
150g mayonnaise
50ml olive or sunflower oil
285g onion, thinly sliced 2 cm lengths
2 red pepper, thin strips 2cm lengths
2 green pepper, thin strips 2cm lengths
3 courgette, cut in half length ways, thinly sliced
to taste salt, sugar and pepper
20 slices bread
225g butter or margarine (optional)

1 Stir fry the vegetables separately in olive oil, adding a little sugar to the peppers, allow to colour, remove and cool.
2 Combine the Dolmio ® Bolognese Sauce with the mayonnaise and check the seasoning.
3 Combine the vegetables and dressing, mix well, make up the sandwich and present.
