Easy Easter Cookies

450g (1lb) Plain Cookie Mix
40mls (3tbs) Cold Water
25g (1oz) Currants
25g (1oz) Mixed peel
1 tsp Mixed spice
1 Lemon Grated rind

1 Make up the cookie mix as directed on the bag.
2 Add the currants, mixed peel, mixed spice, lemon rind and water.
3 Form a dough
4 Divide into 10 portions and roll into balls.
5 Press each one flat onto a baking tray
6 Bake at 190C/375F/Gas Mark 5 for 10-15 minutes.
7 If using a fan assisted oven reduce the temperature to 180C/350F/ Gas Mark 4
8 Leave the cookies on the tray to cool for 2-3 minutes before moving to a cooling rack.
